How exactly does a capacitor store charge?

correct me if i am wrong, i understand that there is a dielectric between the two plates in a capacitor, and i understand the concept of creating a potential charge difference between the two plates.

I am confused as to why, when connected to a battery does one of the plates charge ? the circuit is incomplete, so why would electrons move to one of the plates ? is it cuz it can be considered an extension to the negative lead of the battery. or am i misunderstanding a base concept ?

also, why would capacitors be used in circuits, won t they just be breaks in the circuit until discharge ? then they become a break again ? maybe i just can t yet see the usefulness of this component yet.....
