NaHCO3(s) + H2O(l) acid and base reactions?

If I mix baking soda with hot water I m getting this reaction:

NaHCO3(s) + H2O(l) --> Na+(aq) + HCO3-(g)

--> H2O(l) + Na+(aq)

Right?

And if I m mixing it with cold-warm water I get this reaction:

NaHCO3(s) + H2O(l) --> Na+(aq) + HCO3-(aq)

--> HCO3-(aq) + H2O(l) <-> H2CO3(aq) + OH-(aq)

Right?

So how come I still get a ph higher then 9 even when the HCO3- evaporates after mixing the drinking soda with hot water?
