Doppler Ultrasonography problem?

So basically i have a lot of questions because my lecturer giving me a scientific journal about blood velocity measurement at carotid artery that use doppler ultrasound for us to study. The problem is, I am a Biotechnology student - which has nothing related to this Biomedical Engineering. 

1. Why doppler ultrasound spectra cannot display measurement continuously for more than 3 minutes? 
2. How to extract the radio output signal from its speaker and transfer it to laptop PC? 
3. Is there any range for sampling frequency?
